As far as wonderfulness in food goes, I think we're wired for sweet & fat. Sometimes we get both: chocolate, ice cream, mincemeat pie, shortbread—but as you're finding out one can often ditch the fat and remain some sort of happy with the sugar.
Another magic tool in low-fat cooking is tasty vinegars: sugar & sour.
